Preparing Black Pepper Live Mud Crab

Ingredients:

  • Live mud crab
  • Black peppercorns
  • White peppercorns
  • Butter
  • Garlic
  • Shallot
  • Dried chili
  • Soy sauce
  • Oyster sauce
  • Sugar
  • Cornstarch
  • Water
  • Spring onions
  • Coriander leaves

Instructions:

  1. Prepare the crab: Clean the live mud crab thoroughly, removing gills and other inedible parts. Cut the crab into halves.
  2. Prepare the sauce: In a large wok, heat butter until sizzling. Add minced garlic, shallots, and dried chili. Stir-fry until fragrant.
  3. Add spices: Crush black and white peppercorns and add to the wok along with soy sauce and oyster sauce. Stir in a touch of sugar to balance the flavors.
  4. Cook the crab: Carefully add the live mud crab halves to the wok. Stir-fry until the crab turns bright red and the meat is cooked through.
  5. Thicken the sauce: Create a cornstarch slurry by mixing cornstarch with water. Gradually pour into the wok, stirring continuously until the sauce thickens.
  6. Garnish and serve: Sprinkle with chopped spring onions and coriander leaves before serving immediately.
